
Basque Chicken
Basque Chicken is a flavorful dish from the Basque region of France and Spain. It's a one-pot meal with chicken, peppers, tomatoes, and spices.
Ingredients
- Thyme (1 teaspoon)
- Bay leaf (1)
- Chicken broth (1 cup)
- White wine (1/2 cup)
- Crushed tomatoes (1 can (14 oz))
- Paprika (1 teaspoon)
- Garlic (3 cloves, minced)
- Red bell pepper (1, chopped)
- Onion (1, chopped)
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Chicken thighs (8)
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onion, bell pepper, and garlic. Cook until the vegetables are softened.
- Add the paprika, crushed tomatoes, white wine, chicken broth, bay leaf, and thyme. Bring to a simmer.
- Return the chicken to the pot. Cover and simmer for 45 minutes, or until the chicken is cooked through.
- Serve the Basque Chicken with crusty bread or over rice.
