Sweet potatoes
4 medium, peeled and cut into cubes
Olive oil
3 tablespoons
Garlic powder
1 teaspoon
Paprika
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Walnuts
1 cup, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sweet potato cubes with olive oil, garlic powder, paprika, salt, and black pepper. Toss well to ensure the sweet potatoes are evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper for easy cleanup.
  4. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and slightly caramelized.
  5. While the sweet potatoes roast, heat a small pan over medium heat. Add the chopped walnuts and toast for 3-4 minutes, stirring frequently, until they are fragrant and golden brown.
  6. Once the sweet potatoes are done, remove them from the oven and sprinkle with the toasted walnuts.
