Batata Con Nueces

Batata con Nueces is a delicious Spanish dish made with sweet potatoes and walnuts.

Ingredients

  • Black pepper (to taste)
  • Salt (to taste)
  • Paprika (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Olive oil (2 tablespoons)
  • Walnuts (1 cup, chopped)
  • Sweet potatoes (4 medium, peeled and cubed)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes with olive oil, garlic powder, paprika, salt, and black pepper.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.
  5. In a small pan, toast the chopped walnuts over medium heat for 3-4 minutes, or until fragrant.
  6. Remove the sweet potatoes from the oven and sprinkle with toasted walnuts.
