BBQ Chicken Hashbrowns

Ingredients
- Chicken breasts
- 2 (about 1 lb)
- BBQ sauce
- 1 cup
- Olive oil
- 2 tablespoons
- Onion
- 1 medium, chopped
- Garlic
- 2 cloves, minced
- Hashbrowns
- 4 cups, frozen
- Salt and pepper

- Cheddar cheese
- 1 cup, shredded
- Green onions
- 2 stalks, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts in a baking dish and pour the barbecue sauce over them. Make sure the chicken is well coated with the sauce. Bake for about 20-25 minutes, or until the chicken is fully cooked.
- While the chicken is baking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Saute until they are soft and fragrant.
- Add the hashbrowns to the skillet. Cook them until they are crispy and golden brown on the outside, stirring occasionally. Season with salt and pepper to taste.
- Once the chicken is done, remove it from the oven and shred it using two forks. Mix the shredded chicken into the hashbrowns.
- Sprinkle the shredded cheddar cheese evenly over the hashbrowns and chicken. Place the skillet in the oven and bake for about 5 minutes, or until the cheese is melted and bubbly.
