Original recipe serves 4

Chicken breasts
2 (about 1 lb)
BBQ sauce
1 cup
Olive oil
2 tablespoons
Onion
1 medium, chopped
Garlic
2 cloves, minced
Hashbrowns
4 cups, frozen
Salt and pepper
to taste
Cheddar cheese
1 cup, shredded
Green onions
2 stalks, sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts in a baking dish and pour the barbecue sauce over them. Make sure the chicken is well coated with the sauce. Bake for about 20-25 minutes, or until the chicken is fully cooked.
  3. While the chicken is baking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic. Saute until they are soft and fragrant.
  4. Add the hashbrowns to the skillet. Cook them until they are crispy and golden brown on the outside, stirring occasionally. Season with salt and pepper to taste.
  5. Once the chicken is done, remove it from the oven and shred it using two forks. Mix the shredded chicken into the hashbrowns.
  6. Sprinkle the shredded cheddar cheese evenly over the hashbrowns and chicken. Place the skillet in the oven and bake for about 5 minutes, or until the cheese is melted and bubbly.
