BBQ Pulled Pork Burrito

Ingredients

Pork shoulder
4 pounds
Salt
1 teaspoon
Black pepper
1 teaspoon
Chili powder
2 teaspoons
Cumin
2 teaspoons
Garlic
4 cloves, minced
Onion
1 large, diced
BBQ sauce
2 cups (store-bought or homemade)
Flour tortillas
8 large
Shredded lettuce
2 cups
Diced tomatoes
1 cup
Sliced avocado

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a small bowl, mix together the salt, pepper, chili powder, and cumin. Rub this seasoning all over the pork shoulder.
  3. Heat a large oven-safe pot or Dutch oven over medium-high heat. Once hot, add the seasoned pork shoulder and sear on all sides until nicely browned, about 4-5 minutes per side.
  4. Remove the pork shoulder from the pot and set it aside on a plate.
  5. In the same pot, add the diced onion and minced garlic. Cook for about 3-4 minutes until the onion is translucent and fragrant.
  6. Pour in the BBQ sauce and stir to combine it with the onion and garlic mixture.
  7. Return the seared pork shoulder to the pot, ensuring it is well-coated with the BBQ sauce mixture.
  8. Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the pork is fork-tender and shreds easily.
  9. Once cooked, remove the pork from the pot and shred it using two forks.
  10. Warm the flour tortillas in a dry skillet or microwave until pliable.
  11. To assemble the burritos, place a generous amount of pulled pork onto each tortilla, followed by a handful of shredded lettuce, diced tomatoes, sliced avocado, a dollop of sour cream, and a sprinkle of chopped cilantro.
  12. Fold the sides of the tortilla over the filling and roll it up tightly from the bottom.
