BBQ Pulled Pork Burrito

Ingredients
- Pork shoulder
 - 4 pounds
 - Salt
 - 1 teaspoon
 - Black pepper
 - 1 teaspoon
 - Chili powder
 - 2 teaspoons
 - Cumin
 - 2 teaspoons
 - Garlic
 - 4 cloves, minced
 - Onion
 - 1 large, diced
 - BBQ sauce
 - 2 cups (store-bought or homemade)
 - Flour tortillas
 - 8 large
 - Shredded lettuce
 - 2 cups
 - Diced tomatoes
 - 1 cup
 - Sliced avocado
 - 2
 - Sour cream
 - 1 cup
 - Chopped cilantro
 - 1/2 cup
 
Instructions
- Preheat the oven to 325°F (160°C).
 - In a small bowl, mix together the salt, pepper, chili powder, and cumin. Rub this seasoning all over the pork shoulder.
 - Heat a large oven-safe pot or Dutch oven over medium-high heat. Once hot, add the seasoned pork shoulder and sear on all sides until nicely browned, about 4-5 minutes per side.
 - Remove the pork shoulder from the pot and set it aside on a plate.
 - In the same pot, add the diced onion and minced garlic. Cook for about 3-4 minutes until the onion is translucent and fragrant.
 - Pour in the BBQ sauce and stir to combine it with the onion and garlic mixture.
 - Return the seared pork shoulder to the pot, ensuring it is well-coated with the BBQ sauce mixture.
 - Cover the pot with a lid and transfer it to the preheated oven. Cook for 3-4 hours, or until the pork is fork-tender and shreds easily.
 - Once cooked, remove the pork from the pot and shred it using two forks.
 - Warm the flour tortillas in a dry skillet or microwave until pliable.
 - To assemble the burritos, place a generous amount of pulled pork onto each tortilla, followed by a handful of shredded lettuce, diced tomatoes, sliced avocado, a dollop of sour cream, and a sprinkle of chopped cilantro.
 - Fold the sides of the tortilla over the filling and roll it up tightly from the bottom.
 - Serve the BBQ pulled pork burritos warm and enjoy the explosion of flavors!
