Rustic Beef and Barley Soup

Ingredients
- 1 lb, cut into chunks Stewing beef
- 1 cup Barley
- 2, diced Carrots
- 2 stalks, diced Celery
- 1, chopped Onion
- 2 cloves, minced Garlic
- 6 cups Beef broth
- 1 tablespoon Tomato paste
- 1 tablespoon Worcestershire sauce

Instructions
- Heat a large pot over medium heat. Add the beef and brown on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onion, celery, and carrots. Cook until the vegetables are softened, about 5 minutes.
- Add the garlic and cook for another minute, until fragrant.
- Stir in the tomato paste and Worcestershire sauce, mixing well to coat the vegetables.
- Return the beef to the pot. Add the barley and beef broth. Bring the soup to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 2 hours, or until the beef is tender and the barley is fully cooked.
- Season the soup with salt and pepper to taste before serving warm.
