Authentic Beef Curry

- 2, large, diced Tomatoes
- 1/2 teaspoon Cayenne pepper
- 1 teaspoon, ground Coriander
- 1 teaspoon, ground Cumin
- 1/2 teaspoon, ground Turmeric
- 2 tablespoons Curry powder
- 1 inch piece, grated Ginger
- 3 cloves, minced Garlic
- 1, large, chopped Onion
- 1 pound, cubed Beef

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, sauté until it turns golden, about 5 minutes.
- Mix in the minced garlic and grated ginger, continue to cook for another 2 minutes.
- Add the beef cubes to the pot. Stir occasionally until the beef is brown on all sides.
- In a separate bowl, mix together the curry powder, turmeric, cumin, coriander, and cayenne pepper.
- Stir the spice mixture into the pot until the beef and onions are well coated.
- Add the diced tomatoes and coconut milk to the pot. Season with salt according to your preference.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about an hour, or until the beef is tender and the flavors are well combined.
- Serve the beef curry over steamed basmati rice or with warm naan bread for an authentic Indian experience.
- Sprinkle with fresh cilantro before serving.
Tips
- For a vegetarian option, replace the beef with chickpeas or tofu.
