Beef Dip Sandwich

Instructions
- Preheat your oven to 325°F (163°C).
- Season the beef roast generously with salt and pepper on all sides.
- In a large oven-safe pot or Dutch oven, heat 1 tablespoon of oil over medium-high heat.
- Add the beef roast to the pot and sear it on all sides until browned, about 4-5 minutes per side.
- Once browned, carefully remove the beef roast from the pot and set it aside on a plate.
- In the same pot, add the sliced onion and minced garlic. Sauté for about 3-4 minutes, or until the onion is softened and fragrant.
- Pour in the beef broth, soy sauce, Worcestershire sauce, dried thyme, and additional salt and pepper. Stir to combine.
- Return the seared beef roast to the pot, ensuring it is immersed in the liquid. Bring the mixture to a simmer.
- Cover the pot with a lid and transfer it to the preheated oven. Cook for about 3 hours, or until the beef is tender and can be easily shredded with a fork.
- Once cooked, remove the beef roast from the pot and let it rest for 10 minutes before slicing.
- While the beef rests, slice the crusty bread rolls in half lengthwise.
- Layer the sliced beef on the bottom half of each roll and serve with a small bowl of the flavorful au jus for dipping.
