Ingredients
- Ground beef
- 1 pound
- Onion
- 1 medium, finely chopped
- Garlic
- 3 cloves, minced
- Fresh parsley
- 1/4 cup, chopped
- Cumin
- 1 teaspoon
- Coriander
- 1 teaspoon
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Olive oil
- 2 tablespoons (for grilling)
- Tahini
- 1/2 cup
- Lemon juice
- 2 tablespoons
- Water
- 2-4 tablespoons (for tahini sauce consistency)
- Lettuce
- 1 cup, shredded
- Cucumber
- 1 medium, sliced
- Tomato
- 1 medium, sliced
- Pita bread
- 4 pieces
Instructions
- In a large mixing bowl, combine the ground beef, finely chopped onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
- Divide the mixture into 8 equal portions and shape each portion into long, cylindrical kofta shapes. If desired, you can thread the kofta onto skewers for easier grilling.
- Preheat a grill or grill pan over medium-high heat. Lightly brush the kofta skewers with olive oil to prevent sticking.
- Grill the kofta skewers for about 12-15 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
- While the kofta is grilling, prepare the tahini sauce. In a bowl, combine tahini, lemon juice, minced garlic, salt, and black pepper. Gradually whisk in water, adjusting the amount as needed until the mixture is smooth and creamy.
- Warm the pita bread on the grill for a few seconds on each side until soft and pliable.
- To serve, spread a generous amount of tahini sauce on each warmed pita bread. Place a few kofta skewers on top and garnish with sliced tomatoes, cucumbers, and shredded lettuce.
- Fold the pita bread over the kofta and enjoy the delightful combination of flavors and textures!
Tips
- For added flavor, try marinating the ground beef mixture with some grated lemon zest or a pinch of paprika.
- Feel free to customize your toppings with your favorite vegetables or add some pickled turnips for an extra zing.
- If you prefer a spicier kick, mix in some finely chopped green chili or sprinkle cayenne pepper into the kofta mixture.
