Servings: 4

Ingredients

  • Ground beef (1 pound)
  • Onion (1 medium, finely chopped)
  • Garlic (3 cloves, minced)
  • Fresh parsley (1/4 cup, chopped)
  • Cumin (1 teaspoon)
  • Coriander (1 teaspoon)
  • Salt (1 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Olive oil (2 tablespoons (for grilling))
  • Tahini (1/2 cup)
  • Lemon juice (2 tablespoons)
  • Water (2-4 tablespoons (for tahini sauce consistency))
  • Lettuce (1 cup, shredded)
  • Cucumber (1 medium, sliced)
  • Tomato (1 medium, sliced)
  • Pita bread (4 pieces)

Instructions

  1. In a large mixing bowl, combine the ground beef, finely chopped onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Divide the mixture into 8 equal portions and shape each portion into long, cylindrical kofta shapes. If desired, you can thread the kofta onto skewers for easier grilling.
  3. Preheat a grill or grill pan over medium-high heat. Lightly brush the kofta skewers with olive oil to prevent sticking.
  4. Grill the kofta skewers for about 12-15 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
  5. While the kofta is grilling, prepare the tahini sauce. In a bowl, combine tahini, lemon juice, minced garlic, salt, and black pepper. Gradually whisk in water, adjusting the amount as needed until the mixture is smooth and creamy.
  6. Warm the pita bread on the grill for a few seconds on each side until soft and pliable.
  7. To serve, spread a generous amount of tahini sauce on each warmed pita bread. Place a few kofta skewers on top and garnish with sliced tomatoes, cucumbers, and shredded lettuce.
  8. Fold the pita bread over the kofta and enjoy the delightful combination of flavors and textures!
