Beef Kofta with Tahini Sauce

Instructions
- In a large mixing bowl, combine the ground beef, finely chopped onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
- Divide the mixture into 8 equal portions and shape each portion into long, cylindrical kofta shapes. If desired, you can thread the kofta onto skewers for easier grilling.
- Preheat a grill or grill pan over medium-high heat. Lightly brush the kofta skewers with olive oil to prevent sticking.
- Grill the kofta skewers for about 12-15 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
- While the kofta is grilling, prepare the tahini sauce. In a bowl, combine tahini, lemon juice, minced garlic, salt, and black pepper. Gradually whisk in water, adjusting the amount as needed until the mixture is smooth and creamy.
- Warm the pita bread on the grill for a few seconds on each side until soft and pliable.
- To serve, spread a generous amount of tahini sauce on each warmed pita bread. Place a few kofta skewers on top and garnish with sliced tomatoes, cucumbers, and shredded lettuce.
