Ingredients

Ground beef
1 pound
Onion
1 medium, finely chopped
Garlic
3 cloves, minced
Fresh parsley
1/4 cup, chopped
Cumin
1 teaspoon
Coriander
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Olive oil
2 tablespoons (for grilling)
Tahini
1/2 cup
Lemon juice
2 tablespoons
Water
2-4 tablespoons (for tahini sauce consistency)
Lettuce
1 cup, shredded
Cucumber
1 medium, sliced
Tomato
1 medium, sliced
Pita bread
4 pieces

Instructions

  1. In a large mixing bowl, combine the ground beef, finely chopped onion, minced garlic, chopped parsley, cumin, coriander, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Divide the mixture into 8 equal portions and shape each portion into long, cylindrical kofta shapes. If desired, you can thread the kofta onto skewers for easier grilling.
  3. Preheat a grill or grill pan over medium-high heat. Lightly brush the kofta skewers with olive oil to prevent sticking.
  4. Grill the kofta skewers for about 12-15 minutes, turning occasionally, until they are cooked through and nicely browned on all sides.
  5. While the kofta is grilling, prepare the tahini sauce. In a bowl, combine tahini, lemon juice, minced garlic, salt, and black pepper. Gradually whisk in water, adjusting the amount as needed until the mixture is smooth and creamy.
  6. Warm the pita bread on the grill for a few seconds on each side until soft and pliable.
  7. To serve, spread a generous amount of tahini sauce on each warmed pita bread. Place a few kofta skewers on top and garnish with sliced tomatoes, cucumbers, and shredded lettuce.
  8. Fold the pita bread over the kofta and enjoy the delightful combination of flavors and textures!

Tips

  • 💡 For added flavor, try marinating the ground beef mixture with some grated lemon zest or a pinch of paprika.
  • 💡 Feel free to customize your toppings with your favorite vegetables or add some pickled turnips for an extra zing.
  • 💡 If you prefer a spicier kick, mix in some finely chopped green chili or sprinkle cayenne pepper into the kofta mixture.
