Ingredients

Beef sirloin
200g, thinly sliced
Udon noodles
2 packs
Soy sauce
2 tablespoons
Mirin
2 tablespoons
Sake
2 tablespoons
Beef broth
4 cups
Green onions
2, sliced
Shiitake mushrooms
1 cup, sliced
Baby bok choy
2 cups
Sesame oil
1 tablespoon
Salt and pepper
to taste

Instructions

  1. In a bowl, combine the soy sauce, mirin, and sake. Add the beef slices, ensuring they are fully coated in the marinade. Set aside for 10 minutes to allow the flavors to infuse.
  2. Cook the udon noodles according to the package instructions. Once cooked, drain them and set aside.
  3. In a large pot, heat the sesame oil over medium heat. Add the marinated beef and cook until browned, approximately 2-3 minutes.
  4. Add the sliced shiitake mushrooms to the pot with the beef and cook for another 2 minutes.
  5. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 10 minutes to allow the flavors to develop.
  6. Add the cooked udon noodles and baby bok choy to the pot. Continue to cook for an additional 3-4 minutes, or until the bok choy is tender.
  7. Season the soup with salt and pepper to taste.
