Ingredients

Beets
4 medium-sized, scrubbed
Mixed greens
4 cups
Goat cheese
4 ounces, crumbled
Walnuts
1/2 cup, chopped
Red onion
1/2 cup, thinly sliced
Olive oil
1/4 cup
Balsamic vinegar
2 tablespoons
Dijon mustard
1 teaspoon
Honey
1 teaspoon
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
