Roasted Beet Salad with Goat Cheese and Walnuts

Ingredients

  • Beets (4 medium-sized, scrubbed)
  • Mixed greens (4 cups)
  • Goat cheese (4 ounces, crumbled)
  • Walnuts (1/2 cup, chopped)
  • Red onion (1/2 cup, thinly sliced)
  • Olive oil (1/4 cup)
  • Balsamic vinegar (2 tablespoons)
  • Dijon mustard (1 teaspoon)
  • Honey (1 teaspoon)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast for about 45 minutes, or until a fork can easily pierce them. Let the beets cool slightly, then carefully peel and slice them into wedges.
