Roasted Beet Salad with Goat Cheese and Walnuts

- 4 medium-sized, scrubbed Beets

- 4 ounces, crumbled Goat cheese

- 1/4 cup Olive oil
- 2 tablespoons Balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon Honey

Instructions
- Preheat the oven to 400°F (200°C).
