Roasted Beet Salad with Goat Cheese and Walnuts

Ingredients

Beets
4 medium-sized, scrubbed
Mixed greens
4 cups
Goat cheese
4 ounces, crumbled
Walnuts
1/2 cup, chopped
Red onion
1/2 cup, thinly sliced
Olive oil
1/4 cup
Balsamic vinegar
2 tablespoons
Dijon mustard
1 teaspoon
Honey
1 teaspoon
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast for about 45 minutes, or until a fork can easily pierce them. Let the beets cool slightly, then carefully peel and slice them into wedges.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until well combined to create the vinaigrette.
  4. In a large salad bowl, combine the mixed greens, roasted beet wedges, crumbled goat cheese, chopped walnuts, and thinly sliced red onion.
