Instructions

  1. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  2. In a separate bowl, whisk together the milk, egg, and vegetable oil until smooth and fully incorporated.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. The mixture should be slightly lumpy; do not overmix.
  4. Cover the bowl with plastic wrap and let the dough rest for about 30 minutes. This helps the beignets become fluffier.
  5. In a deep fryer or large pot, heat vegetable oil to 375°F (190°C). Use a thermometer to ensure the temperature is accurate.
  6. Once the oil is hot, drop spoonfuls of the dough (about 1 tablespoon each) into the oil, being careful not to overcrowd the pot. Fry in batches if necessary.
