
Bell Pepper and Bacon Omelette
This delicious omelette is filled with sautéed bell peppers and crispy bacon.
Ingredients
- Butter (1 tablespoon)
- Green onions (2 tablespoons, chopped)
- Cheddar cheese (1/2 cup, shredded)
- Black pepper (1/4 teaspoon)
- Salt (1/4 teaspoon)
- Milk (2 tablespoons)
- Eggs (4)
- Bacon (4 slices, cooked and crumbled)
- Bell peppers (1/2 cup, diced)
Instructions
- In a skillet, sauté the diced bell peppers over medium heat until they are tender, about 5 minutes. Remove from heat and set aside.
- In a bowl, whisk together the eggs, milk, salt, and black pepper.
- Heat the butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet.
- As the eggs start to set, gently lift the edges with a spatula and tilt the skillet to allow the uncooked eggs to flow to the edges.
- Sprinkle the sautéed bell peppers, crumbled bacon, shredded cheddar cheese, and chopped green onions evenly over one half of the omelette.
- Fold the other half of the omelette over the filling and cook for another 1-2 minutes, or until the cheese is melted.
- Slide the omelette onto a plate and serve hot.
