Dive into a burst of flavor with this Zesty Bell Pepper and Cilantro Dip! This vibrant and refreshing dip showcases the sweetness of bell peppers, the bright notes of fresh cilantro, and a zesty kick from lime juice. Perfect for parties, picnics, or just a cozy night in, this dip pairs beautifully with crispy chips or crunchy vegetable sticks. Originating from the colorful cuisines of Latin America, this dip is a modern twist on traditional salsas, bringing together wholesome ingredients that are both healthy and delicious.

Serves 6

Ingredients

Red bell pepper
1, chopped
Yellow bell pepper
1, chopped
Fresh cilantro
1/2 cup, packed
Lime juice
2 tablespoons, freshly squeezed
Greek yogurt
1 cup
Garlic
2 cloves, minced
Cayenne pepper
1/4 teaspoon (adjust to taste)
Black pepper
1/4 teaspoon
Salt
1/2 teaspoon

Instructions

  1. Begin by washing and chopping the red and yellow bell peppers into smaller pieces for easy blending.
  2. In a food processor, combine the chopped bell peppers, fresh cilantro, lime juice, Greek yogurt, minced garlic, salt, black pepper, and cayenne pepper.
  3. Pulse the mixture until smooth and creamy, scraping down the sides of the bowl as needed to ensure everything is well blended.
  4. Once blended, taste and adjust seasoning if necessary, adding more lime juice for acidity or cayenne for heat according to your preference.
  5. Transfer the dip to a serving bowl and cover with plastic wrap.
  6. Refrigerate for at least 1 hour to allow the flavors to meld and intensify.
  7. Serve chilled with your favorite tortilla chips, pita chips, or an assortment of fresh vegetable sticks such as carrots, cucumbers, and celery.

Tips

  • 💡 For a smoky flavor, try adding a pinch of smoked paprika.
  • 💡 You can substitute Greek yogurt with sour cream or a dairy-free yogurt alternative for a different taste.
  • 💡 This dip can also be used as a spread on sandwiches or wraps for an extra layer of flavor.
