Olive oil
2 tablespoons
Bell peppers
1 cup, diced (any color or a mix)
Onion
1/2 cup, diced
Garlic
2 cloves, minced
Eggs
4 large
Salt
to taste
Black pepper
to taste
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced bell peppers, onion, and minced garlic to the skillet. Sauté until the vegetables are tender and fragrant, about 5-7 minutes.
  3. While the vegetables are cooking, crack the eggs into a bowl and whisk until well combined. Season with salt and black pepper.
  4. Once the vegetables are cooked, push them to one side of the skillet. Pour the beaten eggs into the other side.
  5. Allow the eggs to sit for a moment, then gently scramble them using a spatula, cooking until they reach your desired consistency.
  6. Once the eggs are scrambled, mix them with the sautéed vegetables in the skillet.
  7. Remove from heat and sprinkle the fresh parsley on top for added flavor and color.
