Mediterranean Bell Pepper and Feta Frittata

Travel to the sunny Mediterranean coast with this vibrant frittata, bursting with a symphony of colorful bell peppers, sweet onions, and creamy feta cheese. Each bite transports you to a Greek taverna, with the sun setting over the ocean. Fresh basil adds a fragrant finishing touch, making this dish a real breakfast or brunch showstopper.

Serves 6

Ingredients

Fresh basil leaves
a handful, chopped
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Feta cheese
1 cup, crumbled
Milk
1/4 cup
Eggs
6, large
Olive oil
2 tablespoons
Onion
1 medium, finely diced
Bell peppers
2 large, diced (preferably different colors for visual appeal)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In an oven-safe skillet, heat the olive oil over medium heat.
  3. Add the diced bell peppers and onion to the skillet, sautéing until they soft and aromatic, about 5 minutes.
  4. In a separate bowl, briskly whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
  5. Evenly pour the egg mixture over the sautéed bell peppers and onion in the skillet, ensuring it seeps into every nook.
  6. Sprinkle the crumbled feta cheese over the top of the egg mixture, distributing it evenly.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set, lightly puffed, and slightly golden on top.
  8. Remove from the oven and let the frittata cool for a few minutes to make slicing easier.
  9. Garnish the frittata with a sprinkle of fresh chopped basil before serving.
  10. Slice the frittata into wedges and serve warm. Enjoy the Mediterranean flavors!

Tips

  • 💡 For a touch of heat, add a pinch of red pepper flakes.
  • 💡 You can also add other Mediterranean ingredients like olives or sun-dried tomatoes.
  • 💡 This frittata pairs beautifully with a fresh Greek salad or warm pita bread.
