Ingredients

  • Salt and pepper (to taste)
  • Lemon juice (1 tablespoon)
  • Extra virgin olive oil (2 tablespoons)
  • Fresh parsley (1/4 cup, chopped)
  • Feta cheese (1/2 cup, crumbled)
  • Red onion (1/4 cup, thinly sliced)
  • Kalamata olives (1/2 cup, pitted)
  • Bell peppers (2 large, mixed colors, thinly sliced)

Instructions

  1. In a large bowl, combine the sliced bell peppers, Kalamata olives, red onion, feta cheese, and fresh parsley.
