Instructions
- In a small skillet, melt half of the butter over medium heat. Add the diced bell peppers and sauté until they are tender and slightly caramelized, about 5-7 minutes. Remove from heat and set aside.
- In a separate skillet, cook the sausage over medium heat until it is browned and crumbled, about 5-6 minutes. Drain excess fat if necessary and set aside.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
- Heat the remaining butter in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and let it cook for a few minutes, gently pushing the edges toward the center with a spatula as they set.
- Once the edges start to firm up, sprinkle the sautéed bell peppers, cooked sausage, and shredded cheddar cheese evenly over one half of the omelette.
- Using a spatula, carefully fold the other half of the omelette over the filling, creating a half-moon shape. Cook for another minute or two until the cheese is melted and the omelette is cooked through but still soft inside.
- Slide the omelette onto a plate, garnish with extra cheese or herbs if desired, and serve hot.
Tips
- Feel free to substitute the cheddar cheese with your favorite cheese, like feta or mozzarella, for a different flavor profile.
- Add some chopped fresh herbs, such as chives or parsley, to the egg mixture for an added burst of freshness.
- For a spicier kick, incorporate diced jalapeños or a dash of hot sauce into the filling.
