- Chives (1 tablespoon, chopped)
- Black pepper (1/4 teaspoon)
- Salt (1/4 teaspoon)
- Milk (2 tablespoons)
- Eggs (4)
- Smoked salmon (4 ounces, chopped)
- Bell peppers (1/2 cup, diced)
Instructions
- In a bowl, whisk together the eggs, milk, salt, and black pepper.
- Heat butter in a non-stick skillet over medium heat.
- Add the diced bell peppers and cook for 2-3 minutes until slightly softened.
- Pour the egg mixture into the skillet and let it cook undisturbed for a minute.
- Using a spatula, gently lift the edges of the omelette and tilt the skillet to allow the uncooked eggs to flow to the edges.
- Sprinkle the chopped smoked salmon and chives evenly over one half of the omelette.
