Bellini - The Italian Classic

Ingredients
- Ripe peaches
- 2 large
- Simple syrup
- 1 tablespoon
- Lemon juice
- 1 teaspoon
- Ice
- 1 cup
- Prosecco
- 1 bottle, chilled
- Fresh mint leaves

Instructions
- Start by peeling and pitting the peaches. Cut them into chunks and place them in a blender.
- Blend the peaches until you achieve a smooth puree. If you prefer a less pulpy texture, you may strain the puree through a fine mesh sieve.
- In a cocktail shaker, combine the peach puree, simple syrup, lemon juice, and ice. Close the shaker and shake vigorously for about 20 seconds.
- Strain the mixture into chilled champagne flutes or glass, filling each about halfway.
- Slowly top off each glass with chilled Prosecco. Give it a gentle stir to mix the flavors.
- Finally, garnish with a sprig of fresh mint leaves. Serve immediately and enjoy the refreshing taste of a classic Italian Bellini.
- Tip: For a non-alcoholic variation, replace the Prosecco with sparkling water or a non-alcoholic sparkling wine.
