Bellini - The Italian Classic

- 2 large Ripe peaches
- 1 tablespoon Simple syrup
- 1 teaspoon Lemon juice
- 1 cup Ice
- 1 bottle, chilled Prosecco
- For garnish Fresh mint leaves

Instructions
- Start by peeling and pitting the peaches. Cut them into chunks and place them in a blender.
- Blend the peaches until you achieve a smooth puree. If you prefer a less pulpy texture, you may strain the puree through a fine mesh sieve.
- In a cocktail shaker, combine the peach puree, simple syrup, lemon juice, and ice. Close the shaker and shake vigorously for about 20 seconds.
- Strain the mixture into chilled champagne flutes or glass, filling each about halfway.
- Slowly top off each glass with chilled Prosecco. Give it a gentle stir to mix the flavors.
