Ingredients

Active dry yeast
1 packet (2 1/4 teaspoons)
Granulated sugar
1/4 cup, divided
Warm milk
1 cup (110°f/43°c)
All-purpose flour
3 1/2 cups
Salt
1/2 teaspoon
Unsalted butter
1/4 cup, melted
Egg
1 large, beaten
Vanilla extract
1 teaspoon
Vegetable oil
for frying
Powdered sugar
for dusting
Your choice of jam or cream
1 cup

Instructions

  1. In a small bowl, dissolve the yeast and 1 teaspoon of granulated sugar in warm milk. Allow it to sit for 5 minutes until foamy.
  2. In a large mixing bowl, combine the flour, remaining sugar, and salt. Make a well in the center.
  3. Pour the yeast mixture, melted butter, beaten egg, and vanilla extract into the well. Mix until a soft dough forms.
  4. Transfer the dough to a floured surface. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. After the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a smooth ball.
  7. In a deep pot or fryer, heat vegetable oil to 350°F (175°C).
  8. Carefully drop the dough balls into the hot oil, frying them for about 3-4 minutes per side or until golden brown.
  9. Remove the fried Berliners from the oil and drain them on a paper towel-lined plate.
  10. Once they have cooled slightly, use a piping bag or a small knife to fill each Berliner with your choice of jam or cream.
  11. Generously dust the filled Berliners with powdered sugar before serving.
