Ingredients
- Mixed berries (strawberries, blueberries, raspberries, blackberries)
- 4 cups, fresh or frozen
- Sugar
- 1/2 cup
- Lemon juice
- 2 tablespoons, freshly squeezed
- Water
- 1/2 cup
- Vanilla extract
- 1 teaspoon
- Cornstarch
- 2 tablespoons
- Water (for slurry)
- 1 tablespoon
Instructions
- In a medium saucepan, combine the mixed berries, sugar, lemon juice, water, and vanilla extract. Stir gently to combine.
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to ensure the sugar dissolves and the berries begin to break down.
- In a small bowl, mix the cornstarch with 1 tablespoon of water to create a smooth slurry.
- Once the berry mixture is simmering, slowly add the cornstarch slurry while stirring continuously. This will help to thicken the compote.
- Continue to cook the compote for an additional 5 minutes, or until it reaches your desired thickness, stirring occasionally.
- Remove the saucepan from heat and let the compote cool slightly before serving. It can be enjoyed warm or chilled.
