Ingredients

Mixed berries (strawberries, blueberries, raspberries, blackberries)
4 cups, fresh or frozen
Sugar
1/2 cup
Lemon juice
2 tablespoons, freshly squeezed
Water
1/2 cup
Vanilla extract
1 teaspoon
Cornstarch
2 tablespoons
Water (for slurry)
1 tablespoon

Instructions

  1. In a medium saucepan, combine the mixed berries, sugar, lemon juice, water, and vanilla extract. Stir gently to combine.
  2. Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally to ensure the sugar dissolves and the berries begin to break down.
  3. In a small bowl, mix the cornstarch with 1 tablespoon of water to create a smooth slurry.
  4. Once the berry mixture is simmering, slowly add the cornstarch slurry while stirring continuously. This will help to thicken the compote.
  5. Continue to cook the compote for an additional 5 minutes, or until it reaches your desired thickness, stirring occasionally.
