3 tablespoons
Onion
1 medium, finely chopped
Garlic
4 cloves, minced
Ginger
1 inch, grated
Mixed vegetables

Turmeric powder
1 teaspoon
Cumin powder
1 teaspoon
Coriander powder
1 teaspoon
Red chili powder
1/2 teaspoon (adjust to taste)
Salt
to taste
Lemon juice
1 tablespoon
Cilantro
1/4 cup, chopped
Cooked rice
4 cups (preferably day-old)

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the mixed vegetables to the pan, cooking for 5-7 minutes, or until they are tender but still vibrant in color.
  5. Sprinkle in the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well to coat the vegetables with the spices.
  6. Add the cooked rice to the pan, breaking up any clumps. Stir-fry for 5-7 minutes, ensuring the rice is heated through and well combined with the vegetables and spices.
