Bifana
Bifana is a beloved traditional Portuguese sandwich that encapsulates the heart and soul of Portugal's culinary heritage. This dish features tender, marinated pork cutlets grilled to perfection, nestled inside a fresh roll, offering a delightful combination of flavors and textures. The fragrant garlic and smoky paprika, combined with the acidity of white wine, create a robust marinade that ensures each bite is juicy and flavorful. Often enjoyed as a street food delicacy, the Bifana is the ultimate comfort food, perfect for lunch or a casual dinner.
Ingredients
- Pork cutlets
- 1 pound, thinly sliced
- Garlic
- 4 cloves, minced
- White wine
- 1/2 cup
- Paprika
- 1 tablespoon
- Bay leaves
- 2, crushed
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Olive oil
- 2 tablespoons
- Fresh rolls
- 4, crusty
- Mustard or hot sauce
- to taste
Instructions
- In a large bowl, combine the thinly sliced pork cutlets, minced garlic, white wine, paprika, crushed bay leaves, salt, and black pepper. Mix well to ensure the pork is evenly coated in the marinade. Cover and let marinate in the refrigerator for at least 2 hours, or overnight for more intense flavor.
- Preheat a grill pan over medium heat and add the olive oil once hot.
- Remove the pork cutlets from the marinade, allowing excess liquid to drip off, and place them in the grill pan. Cook for about 3 minutes on each side, or until the pork is nicely browned and cooked through.
- While the pork is cooking, slice the fresh rolls open. Once the pork is done, place the cutlets inside the rolls.
- Top with your choice of mustard or hot sauce for added flavor. Serve immediately and enjoy!
Tips
- For a spicier kick, consider adding a pinch of cayenne pepper to the marinade.
- Bifana pairs wonderfully with a side of crispy potato chips or a fresh salad.
- Feel free to customize your toppings with pickles or sautéed onions for added depth.
