Ingredients

Cooking oil
2 tablespoons
Black pepper

Sugar
1 tablespoon
Water
1 cup
Green chili peppers
2, sliced
Tomato
1 large, chopped
Onion
1 medium, sliced
Garlic
4 cloves, minced
Shrimp paste
1/2 cup
Pork belly
1 pound, cut into cubes

Instructions

  1. Heat the cooking oil in a large pan over medium heat.
  2. Add the pork belly cubes and cook until browned and crispy, about 8-10 minutes. Remove the pork belly from the pan and set aside.
  3. In the same pan, sauté the minced garlic, sliced onion, and chopped tomato until softened and fragrant, about 5 minutes.
  4. Stir in the shrimp paste and cook for 2-3 minutes to enhance its flavor.
  5. Return the crispy pork belly to the pan and mix well with the shrimp paste mixture, making sure the meat is well-coated.
  6. Pour in the water and bring the mixture to a boil.
  7. Reduce the heat to low, cover, and let it simmer for 30 minutes or until the pork is tender and infused with the flavors.
  8. Add the sliced green chili peppers, sugar, and black pepper. Stir well and cook for another 5 minutes to meld the flavors together.
  9. Serve hot over steamed rice, allowing the savory sauce to soak into the rice for a delightful experience.
