  • Cinnamon stick (1)
  • Cumin seeds (1 teaspoon)
  • Red chili powder (1 teaspoon)
  • Turmeric powder (1/2 teaspoon)
  • Biryani masala powder (2 tablespoons)
  • Yogurt (1/2 cup)
  • Ginger, minced (1 tablespoon)
  • Tomato, chopped (1 medium)
  • Onion, sliced (1 large)
  • Chicken (or meat/vegetables of your choice) (500 grams)
  • Water (4 cups)

Instructions

  1. Begin by washing the basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  2. In a large pot or heavy-bottomed pan, heat the ghee over medium heat. Once hot, add the cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for 1 minute until the spices are fragrant, filling your kitchen with a warm aroma.
  3. Add the sliced onions to the pot and cook until they turn golden brown, stirring occasionally to avoid burning. This step is crucial as it adds depth and sweetness to the dish.
