Bistec Ranchero

Ingredients
- 2 tablespoons Vegetable oil
- 1 medium, finely chopped Onion
- 3 cloves, minced Garlic
- 1.5 pounds, thinly sliced Beef steak
- 2 large, diced Tomatoes
- 1, seeds removed and finely chopped Jalapeno
- 1/2 teaspoon Cumin
- 1/2 teaspoon Paprika

Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic to the skillet. Saute until the onion turns translucent and the garlic releases its aroma, about 2-3 minutes.
- Season the beef steak slices with salt, pepper, cumin, and paprika. Add them to the skillet and brown on both sides, about 3-4 minutes per side. Once done, remove the beef from the skillet and set it aside.
- In the same skillet, add the diced tomatoes and chopped jalapeno. Cook for about 5 minutes until the tomatoes soften and release their juices.
- Return the seasoned beef to the skillet. Stir well to ensure each slice is coated with the tomato and jalapeno mixture.
- Reduce the heat to low, cover the skillet, and let everything simmer for about 15-20 minutes. This allows the flavors to meld together and the beef to become tender and fully cooked.
- Just before serving, sprinkle the dish with freshly chopped cilantro for a burst of freshness.
- Serve the Bistec Ranchero with warm rice, beans, and tortillas for a truly authentic Mexican meal!

- For a spicier kick, leave the seeds in the jalapeno or add an extra one.
