1 cup
Black sesame seeds
1/4 cup
Sugar
1/4 cup
Water
3/4 cup
Cornstarch
for dusting, about 1/4 cup

Instructions

  1. Begin by toasting the black sesame seeds in a dry pan over medium heat. Stir frequently until they become fragrant and slightly darker, about 3-5 minutes.
  2. Once toasted, transfer the seeds to a food processor and grind them until they form a coarse powder. Be careful not to over-process, or you may end up with sesame paste.
  3. In a mixing bowl, combine the glutinous rice flour, ground black sesame seeds, and sugar, mixing well to ensure an even distribution.
  4. Gradually add the water to the dry mixture, stirring continuously until a smooth, lump-free batter forms. The consistency should be similar to pancake batter.
  5. Pour the batter into a greased heatproof dish, spreading it evenly.
  6. Set up a steamer and bring the water to a boil. Once boiling, place the dish with the batter in the steamer and cover with a lid. Steam over high heat for 20-30 minutes, or until the mochi is set, glossy, and translucent.
  7. Once cooked, remove the dish from the steamer and allow the mochi to cool completely at room temperature.
  8. Once cooled, dust your work surface with cornstarch. Turn the mochi out onto the surface and cut it into squares or desired shapes, dusting each piece with additional cornstarch to prevent sticking.
