Instructions
- Begin by toasting the black sesame seeds in a dry pan over medium heat. Stir frequently until they become fragrant and slightly darker, about 3-5 minutes.
- Once toasted, transfer the seeds to a food processor and grind them until they form a coarse powder. Be careful not to over-process, or you may end up with sesame paste.
- In a mixing bowl, combine the glutinous rice flour, ground black sesame seeds, and sugar, mixing well to ensure an even distribution.
- Gradually add the water to the dry mixture, stirring continuously until a smooth, lump-free batter forms. The consistency should be similar to pancake batter.
- Pour the batter into a greased heatproof dish, spreading it evenly.
- Set up a steamer and bring the water to a boil. Once boiling, place the dish with the batter in the steamer and cover with a lid. Steam over high heat for 20-30 minutes, or until the mochi is set, glossy, and translucent.
