Ingredients

Fresh blackberries
4 cups
Granulated sugar
1 cup, divided
All-purpose flour
1 cup
Baking powder
2 teaspoons
Salt
1/4 teaspoon
Unsalted butter
1/2 cup, cold and cubed
Milk
1/2 cup
Vanilla extract
1 teaspoon
Lemon zest
1 teaspoon
Cinnamon
1/2 teaspoon
Powdered sugar
1 tablespoon (for dusting)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the fresh blackberries and 3/4 cup of granulated sugar. Toss gently to coat the blackberries evenly and let them sit for 10 minutes to macerate, allowing their juices to release.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and remaining 1/4 cup of granulated sugar.
  4. Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  5. Stir in the milk, vanilla extract, lemon zest, and cinnamon until just combined. Be careful not to overmix the batter.
  6. Transfer the macerated blackberries along with their juices into a 9x9-inch baking dish, spreading them out evenly across the bottom.
  7. Drop spoonfuls of the biscuit dough over the blackberries, covering them as much as possible. It's okay if some of the blackberries peek through!
  8. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the blackberries are bubbling up around the edges.
  9. Once baked, remove the cobbler from the oven and let it cool for a few minutes.
  10. Dust the top with powdered sugar before serving. Serve warm, preferably with a generous scoop of vanilla ice cream for an extra indulgent treat.
