Ingredients
- Fresh salmon fillets
- 4 (6-ounce fillets)
- Fresh blackberries
- 1 cup
- Honey
- 2 tablespoons
- Balsamic vinegar
- 2 tablespoons
- Dijon mustard
- 1 tablespoon
- Salt

- Black pepper
- to taste
- Fresh parsley
- for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small saucepan over medium heat, combine the blackberries, honey, balsamic vinegar, and Dijon mustard.
- Cook the mixture for about 5 minutes, stirring occasionally, until the blackberries break down and the sauce thickens. Remove from heat and let it cool slightly.
- While the glaze is cooling, season the salmon fillets with salt and pepper on both sides.
- Line a baking sheet with parchment paper and place the salmon fillets on it.
- Generously brush the blackberry glaze over the tops of the salmon fillets, reserving some glaze for serving later.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
- Once done, remove the salmon from the oven and let it rest for a few minutes.
- Serve the salmon with the reserved blackberry glaze drizzled on top, garnished with freshly chopped parsley.
