Servings: 10
Ingredients
- Blackberries
- 1 cup, fresh or frozen
- Vanilla extract
- 1 teaspoon
- Coconut oil
- 1/4 cup
- Honey
- 1/3 cup
- Chia seeds
- 2 tablespoons
- Pumpkin seeds
- 1/2 cup
- Almonds
- 1/2 cup, chopped
- Oats
- 2 cups, old-fashioned
Instructions
- Preheat the oven to 325°F (165°C). Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the old-fashioned oats, chopped almonds, pumpkin seeds, and chia seeds.
- In a small saucepan, combine the honey, coconut oil, and vanilla extract. Heat over low flame, stirring until the ingredients melt and integrate into a smooth, fragrant mixture.
- Pour the warm honey mixture over the oat mixture. Stir well until every oat, nut, and seed is coated with the sweet, aromatic blend.
- Spread the coated oat mixture evenly across the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes. Halfway through, stir the granola to ensure even browning.
- Once the granola is golden brown and crispy, remove it from the oven. Let it cool completely on the baking sheet.
- After the granola has cooled, gently mix in the blackberries.
- Store your Blackberry Bliss Granola in an airtight container. It stays fresh and crunchy for up to 2 weeks.
- Serve it with your choice of yogurt or milk, or simply enjoy it as a healthy, on-the-go snack!
