Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Be careful not to overmix; the batter should be slightly lumpy.
- Fold in the fresh blackberries with a spatula, taking care not to crush them.
- Spoon the batter evenly into the muffin cups, filling each about 3/4 full to allow for rising.
- If desired, sprinkle the tops of the muffins with turbinado sugar for a delightful crunch.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Tips
- For an extra burst of flavor, try adding a teaspoon of lemon zest to the wet ingredients.
- If using frozen blackberries, do not thaw them before adding to the batter to prevent excess moisture.
