Ingredients
- Pancake mix
- 1 cup
- Milk
- 1 cup
- Egg
- 1 large
- Fresh blueberries
- 1 cup
- Unsalted butter
- 2 tablespoons (for cooking pancakes)
- Flour tortillas
- 4 (10-inch)
- Maple syrup
- 1/2 cup (for drizzling)
Instructions
- In a mixing bowl, combine the pancake mix, milk, and egg. Whisk until the batter is smooth and well combined.
- Gently fold in the fresh blueberries into the pancake batter, being careful not to crush them.
- Heat a non-stick skillet over medium heat and melt 1 tablespoon of unsalted butter.
- Pour 1/4 cup of the pancake batter onto the skillet to form a small pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook the other side until golden brown, about 1-2 minutes more. Repeat with the remaining batter, adding more butter to the skillet as needed.
- While the pancakes are cooking, warm the flour tortillas in a separate skillet or microwave until pliable.
- To assemble, place a pancake on each tortilla and drizzle generously with maple syrup.
- Roll up the tortilla tightly, tucking in the sides as you go, to form a burrito.
- Serve warm, drizzled with additional maple syrup if desired, and enjoy your delicious Blueberry Pancake Burrito!
Tips
- For a healthier twist, consider using whole wheat pancake mix.
- You can substitute other berries like strawberries or raspberries for a different flavor.
- Add a sprinkle of cinnamon or vanilla extract to the pancake batter for extra flavor.
