Ingredients

Pancake mix
1 cup
Milk
1 cup
Egg
1 large
Fresh blueberries
1 cup
Unsalted butter
2 tablespoons (for cooking pancakes)
Flour tortillas
4 (10-inch)
Maple syrup
1/2 cup (for drizzling)

Instructions

  1. In a mixing bowl, combine the pancake mix, milk, and egg. Whisk until the batter is smooth and well combined.
  2. Gently fold in the fresh blueberries into the pancake batter, being careful not to crush them.
  3. Heat a non-stick skillet over medium heat and melt 1 tablespoon of unsalted butter.
  4. Pour 1/4 cup of the pancake batter onto the skillet to form a small pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook the other side until golden brown, about 1-2 minutes more. Repeat with the remaining batter, adding more butter to the skillet as needed.
