Bo Bia (Vietnamese Fresh Spring Rolls)
Bo Bia is a delightful Vietnamese street food that captures the essence of fresh and vibrant flavors. These spring rolls are a perfect fusion of textures, featuring a medley of crisp vegetables, succulent shrimp, and savory Chinese sausage, all wrapped in delicate rice paper. Ingredients
- 8-10 sheets Rice paper wrappers
- 4 ounces, sliced Cooked Chinese sausage
- 8-10 pieces, peeled and deveined Cooked shrimp
- 1 cup, a mix of mint, cilantro, and Thai basil Fresh herbs
- 4-6 leaves, preferably butter or romaine Lettuce
- 1 medium, julienned Cucumber
- 1 medium, julienned Carrots
- 1 small, julienned Jicama
- 1 cup, see instructions below for preparation Peanut sauce

Instructions
- Prepare all the ingredients: julienne the jicama, carrots, and cucumber, and set aside.
- To soften the rice paper wrappers, fill a large bowl with warm water. Dip one wrapper into the water for a few seconds until it becomes soft and pliable.
- Lay the softened rice paper wrapper on a clean surface or plate.
- Begin layering by placing a lettuce leaf on the rice paper wrapper.
- Add a small handful of julienned jicama, carrots, and cucumber over the lettuce.
- Sprinkle a mix of fresh herbs on top of the vegetables for a burst of flavor.
- Place a piece of cooked shrimp and a slice of Chinese sausage on top of the herbs.
- Carefully fold the sides of the rice paper wrapper over the filling, then roll it up tightly, starting from the bottom.
- Repeat the process with the remaining rice paper wrappers and filling ingredients.
- Serve the Bo Bia spring rolls with peanut sauce on the side for dipping.

- Feel free to add other proteins like grilled chicken or tofu for variety.
- For a vegetarian option, omit the shrimp and sausage and add more vegetables.
