Ingredients
- Water
- 6 cups
- Rice
- 1 cup, jasmine or long-grain
- Chicken breast
- 1 pound, cooked and shredded
- Mixed vegetables
- 2 cups, such as carrots, peas, and corn
- Garlic
- 3 cloves, minced
- Ginger
- 1 tablespoon, grated
- Fish sauce
- 3 tablespoons
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Green onions
- 2, chopped (for garnish)
- Cilantro
- 1/4 cup, chopped (for garnish)
- Lime
- 1, cut into wedges (for serving)
Instructions
- In a large pot, bring 6 cups of water to a boil over medium heat.
- Once boiling, add 1 cup of rinsed rice, reduce the heat to low, and cover the pot. Simmer for about 30 minutes, stirring occasionally, until the rice is fully cooked and the mixture thickens to a porridge-like consistency.
- Add 2 cups of mixed vegetables, 1 pound of shredded chicken, 3 minced garlic cloves, 1 tablespoon of grated ginger, 3 tablespoons of fish sauce, 1 teaspoon of salt, and 1/2 teaspoon of black pepper to the pot. Stir to combine and cook for an additional 15 minutes, allowing the flavors to meld together.
- Taste the porridge and adjust the seasoning with more fish sauce, salt, or pepper as needed.
- Serve the Bobor Kreung hot, garnished with chopped green onions and cilantro. Add lime wedges on the side for an extra zing.
