Boeber is a traditional creamy drink that captures the essence of South African Cape Malay culture. This indulgent delight, often enjoyed during Ramadan, is a sweet symphony of flavors, blending the nutty richness of vermicelli, the unique texture of sago, and aromatic spices like cardamom and cinnamon. Finished with a hint of fragrant rose water, this comforting beverage is perfect for warming both the body and soul. Whether served warm on a chilly evening or chilled for a refreshing treat, Boeber brings people together in celebration and joy.

Servings: 4

Ingredients

Butter
2 tablespoons
Vermicelli
1/2 cup
Sago
1/4 cup
Milk
4 cups
Sugar
1/2 cup
Cardamom pods
4, crushed
Stick cinnamon
1
Rose water
1 tablespoon
Almond slivers
1/4 cup, for garnish

Instructions

  1. In a large pot, melt the butter over medium heat until bubbly.
  2. Add the vermicelli and cook, stirring frequently, until it turns golden brown, about 3-5 minutes.
  3. Stir in the sago, milk, sugar, crushed cardamom pods, and stick cinnamon. Mix well to combine all the ingredients.
  4. Reduce the heat to low and let the mixture simmer gently for about 1 hour. Stir occasionally to prevent sticking, until the sago becomes transparent and the mixture thickens.
  5. Once thickened, remove the pot from heat and stir in the rose water for a fragrant finish.
  6. Serve warm in cups, garnished with almond slivers for a delightful crunch.
