Potatoes
2 pounds, any variety (yukon gold, russet, or red potatoes work well)
Water
enough to cover potatoes by 1 inch
Salt
1 tablespoon, plus more for seasoning
Butter
2 tablespoons (optional, for serving)
Heavy cream or milk
1/4 cup (optional, for mashing)
Chives or parsley
chopped, for garnish (optional)

Instructions

  1. Begin by washing the potatoes thoroughly under cool running water to remove any dirt or debris. If using organic potatoes, you may choose to leave the skins on for added flavor and nutrients.
  2. Peel the potatoes if you prefer a smoother texture. Cut them into evenly sized pieces, about 1-2 inches in diameter, to ensure they cook evenly.
  3. Place the cut potatoes into a large pot and add enough water to cover them by about an inch.
  4. Add 1 tablespoon of salt to the pot and bring the water to a rapid boil over high heat.
  5. Once boiling, reduce the heat to medium-low and allow the potatoes to simmer gently for about 15-20 minutes, or until they are fork-tender. To check for doneness, pierce a potato piece with a fork; it should slide in easily when cooked.
  6. Once cooked, drain the potatoes in a colander to remove excess water.
  7. For serving, you can either sprinkle the boiled potatoes with additional salt or mash them with butter and cream for a richer side dish. If mashing, add the butter and cream, and mash until desired consistency is reached.
  8. Garnish with chopped chives or parsley if desired, and serve hot.
