
Bok Choy and Chicken Curry
This flavorful curry combines tender chicken and nutritious bok choy in a rich and aromatic sauce.
Ingredients
- Fresh cilantro (for garnish)
- Cooked rice (for serving)
- Salt (to taste)
- Brown sugar (1 tablespoon)
- Lime juice (1 tablespoon)
- Fish sauce (2 tablespoons)
- Red bell pepper (1, sliced)
- Onion (1, chopped)
- Ginger (1 tablespoon, grated)
- Garlic (3 cloves, minced)
- Curry paste (2 tablespoons)
- Coconut milk (1 can (400ml))
- Bok choy (4 heads, chopped)
- Chicken breast (2, boneless and skinless, cut into bite-sized pieces)
Instructions
- In a large pan or wok, heat some oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the curry paste and cook for another minute.
- Pour in the coconut milk and bring to a simmer.
- Add the chopped bok choy and sliced red bell pepper. Cook until the vegetables are tender.
- Season with fish sauce, lime juice, brown sugar, and salt to taste. Adjust the seasoning according to your preference.
