Bok Choy and Chicken Dumplings

- 1 pound Ground chicken
- 2 cups, finely chopped Bok choy
- 1/2 cup, finely chopped Green onions
- 2 cloves, minced Garlic
- 1 tablespoon, minced Ginger
- 2 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 package (about 50 wrappers) Wonton wrappers

Instructions
- In a large mixing bowl, combine the ground chicken, chopped bok choy, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Lay out a wonton wrapper on a clean surface. Place a teaspoon of the filling mixture in the center of the wrapper. Moisten the edges of the wrapper with a small amount of water using your fingertip.
- Fold the wrapper in half diagonally to form a triangle, ensuring that the filling is securely enclosed. Press the edges firmly together to seal. If desired, create pleats along the edges for a decorative touch.
- In a large pot, bring water to a boil. Place a steamer basket on top of the pot, ensuring it doesn’t touch the boiling water.
- Arrange the dumplings in the steamer basket, making sure they are not touching each other to prevent sticking. Cover the basket with a lid.
- Steam the dumplings for 15-20 minutes, or until the chicken is fully cooked and the wrappers are translucent.
- Serve the dumplings hot with the following dipping sauce: In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of rice vinegar, and a sprinkle of sesame seeds. Stir to mix.
