Green onions
2, sliced for garnish
Salt
to taste
Pepper
to taste
Sesame oil
1 tablespoon
Soy sauce
2 tablespoons
Chicken broth
6 cups
Ginger
1 tablespoon, minced
Garlic
3 cloves, minced
Onion
1, diced
Celery
2 stalks, diced
Carrots
2, sliced
Bok choy
4 cups, chopped
Chicken breast
1 pound, diced

Instructions

  1. In a large pot, heat 1 tablespoon of oil over medium heat.
  2. Add the diced onion, minced garlic, and ginger. Sauté until fragrant, about 2-3 minutes.
  3. Add the diced chicken breast to the pot and cook until browned, about 5-7 minutes.
  4. Stir in the sliced carrots and diced celery, cooking for an additional 3 minutes.
  5. Add the chopped bok choy and stir well to combine all ingredients.
  6. Pour in the chicken broth and bring the mixture to a boil.
  7. Once boiling, reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
  8. Stir in the soy sauce and sesame oil, then season with salt and pepper to taste.
  9. Serve hot, garnished with sliced green onions.
