Instructions

  2. Add the minced ginger and garlic to the pot. Sauté for about 2 minutes until fragrant, being careful not to burn the garlic.
  3. Introduce the chopped bok choy to the pot. Cook for an additional 2 minutes, stirring occasionally, until the bok choy starts to wilt.
  4. Pour in the vegetable broth and bring the mixture to a rolling boil.
  5. Once boiling, reduce the heat to low and let the soup simmer for about 10 minutes, or until the bok choy is tender but still vibrant in color.
  6. Stir in the soy sauce and season generously with salt and pepper to taste, adjusting as necessary.
  7. Serve the soup hot, garnished with sliced green onions for a burst of freshness.

Tips

  • 💡 For added depth of flavor, consider adding sliced mushrooms or tofu to the soup during the simmering stage.
  • 💡 If you prefer a spicier kick, add a teaspoon of chili paste or fresh chopped chili along with the ginger and garlic.
  • 💡 This soup can be served over cooked rice or noodles for a more substantial meal.
