Bok Choy and Sesame Chicken Stir-fry

- 1 large head, chopped Bok choy
- 1 pound, thinly sliced Chicken breast

Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water to create the flavorful sesame sauce. Set aside.
- Heat the cooking oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken and cook until browned and thoroughly cooked. This should take about 5 to 7 minutes. Once cooked, remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped bok choy. Cook for 2 to 3 minutes, or until the bok choy has slightly wilted.
- Return the cooked chicken to the skillet. Pour the prepared sesame sauce over the chicken and bok choy.
- Stir well to ensure all ingredients are coated in the sauce. Continue to cook for an additional 2 to 3 minutes, or until the sauce thickens.
- Season the stir-fry with salt and pepper to taste.
- Garnish the dish with the sesame seeds and sliced green onions before serving.
