Ingredients
- Cooking oil (2 tablespoons)
- Black pepper (to taste)
- Salt (to taste)
- Cornstarch (1 teaspoon)
- Vegetable broth (1/4 cup)
- Sesame oil (1 tablespoon)
- Soy sauce (2 tablespoons)
- Ginger (1 tablespoon, minced)
- Garlic (3 cloves, minced)
- Shiitake mushrooms (8 ounces, sliced)
- Bok choy (4 heads, chopped)
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, vegetable broth, and cornstarch. Set aside.
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add minced garlic and ginger to the skillet and stir fry for 1 minute.
- Add sliced shiitake mushrooms to the skillet and cook for 2-3 minutes, until they start to soften.
- Add chopped bok choy to the skillet and stir fry for 3-4 minutes, until wilted.
- Pour the sauce mixture over the vegetables in the skillet and stir well to coat.
- Cook for an additional 2-3 minutes, until the sauce thickens and coats the vegetables.
- Season with salt and black pepper to taste.
