Bok Choy and Shrimp Wonton Soup

This delicious soup features homemade shrimp wontons and fresh bok choy in a flavorful broth.

Ingredients

  • Salt and pepper (to taste)
  • Green onions (2, thinly sliced)
  • Sesame oil (1 tablespoon)
  • Soy sauce (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Ginger (1 tablespoon, grated)
  • Chicken broth (4 cups)
  • Bok choy (4 baby bok choy, chopped)
  • Wonton wrappers (24 wrappers)
  • Shrimp (1/2 pound, peeled and deveined)

Instructions

  1. In a food processor, combine the shrimp, ginger, garlic, soy sauce, sesame oil, salt, and pepper. Pulse until well combined.
  2. Place a spoonful of the shrimp mixture in the center of each wonton wrapper. Wet the edges of the wrapper with water and fold in half to form a triangle. Press the edges to seal.
  3. In a large pot, bring the chicken broth to a boil. Add the wontons and cook for 5-7 minutes, or until they float to the surface.
  4. Add the bok choy and green onions to the pot and cook for an additional 2-3 minutes, or until the bok choy is tender.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
