Ingredients

  • Black pepper (to taste)
  • Salt (to taste)
  • Vegetable oil (2 tablespoons)
  • Water (1/4 cup)
  • Cornstarch (1 tablespoon)
  • Sesame oil (1 tablespoon)
  • Soy sauce (3 tablespoons)
  • Ginger (1 tablespoon, grated)
  • Garlic (3 cloves, minced)
  • Bok choy (4 heads, chopped)

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, cornstarch, and water. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the minced garlic and grated ginger to the skillet and cook for 1-2 minutes, until fragrant.
  4. Add the chopped bok choy to the skillet and stir fry for 3-4 minutes, until wilted but still crisp.
  5. Pour the soy sauce mixture over the bok choy and stir fry for an additional 1-2 minutes, until the sauce thickens and coats the vegetables.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and serve hot as a side dish.
