Ingredients

Vegetable oil
2 tablespoons
Garlic
3 cloves, minced
Ginger
1 tablespoon, grated
Bok choy
4 cups, chopped
Vegetable broth
6 cups
Soy sauce
3 tablespoons
Sesame oil
1 tablespoon
Tofu
14 ounces, firm, cubed
Rice noodles
8 ounces
Green onions
2, sliced
Cilantro
1/4 cup, chopped
Lime
1, juiced
Red pepper flakes
1/2 teaspoon
Salt
to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
  3. Stir in the chopped bok choy, cooking for 3-4 minutes until slightly wilted.
  4. Pour in the vegetable broth and bring to a rolling boil.
  5. Reduce the heat, then stir in the soy sauce and sesame oil.
  6. Gently add the cubed tofu and rice noodles to the pot, cooking for 5-7 minutes until the noodles are tender and the tofu is heated through.
  7. Remove from heat, then stir in the sliced green onions, lime juice, and chopped cilantro.
  8. Season with red pepper flakes and salt to taste.
  9. Serve hot, garnished with additional cilantro and lime wedges if desired.
