- Bok choy
- 4 cups, chopped
- Vegetable broth
- 6 cups
- Soy sauce

- Sesame oil
- 1 tablespoon
- Tofu
- 14 ounces, firm, cubed
- Rice noodles
- 8 ounces
- Green onions
- 2, sliced
- Cilantro
- 1/4 cup, chopped
- Lime
- 1, juiced
- Red pepper flakes
- 1/2 teaspoon
- Salt

Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the minced garlic and grated ginger, cooking for 1-2 minutes until fragrant.
- Stir in the chopped bok choy, cooking for 3-4 minutes until slightly wilted.
- Pour in the vegetable broth and bring to a rolling boil.
- Reduce the heat, then stir in the soy sauce and sesame oil.
- Gently add the cubed tofu and rice noodles to the pot, cooking for 5-7 minutes until the noodles are tender and the tofu is heated through.
- Remove from heat, then stir in the sliced green onions, lime juice, and chopped cilantro.
- Season with red pepper flakes and salt to taste.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
