Servings: 4

Ingredients

4 cups, chopped
Firm tofu
14 oz, pressed and cut into bite-sized cubes
Carrots
1 cup, shredded
Red bell pepper
1, thinly sliced
Green onions
1/2 cup, chopped
Fresh cilantro
1/4 cup, chopped
Sesame seeds
2 tablespoons, toasted

Instructions

  1. Begin by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel and place a heavy object on top for about 15 minutes. Once pressed, cut the tofu into bite-sized cubes and set aside.
  2. In a large mixing bowl, combine the chopped bok choy, cubed tofu, shredded carrots, sliced red bell pepper, chopped green onions, and fresh cilantro. Toss gently to mix the ingredients and ensure even distribution.
  3. In a separate small bowl, whisk together the lime juice, soy sauce, rice vinegar, honey, grated ginger, minced garlic, salt, and pepper until well combined. This will create a flavorful dressing.
  4. Pour the dressing over the salad and toss everything together until the vegetables and tofu are evenly coated with the dressing.
  5. Sprinkle the toasted sesame seeds on top for an added crunch and visual appeal.
  6. Serve the salad immediately for the freshest taste, or let it sit for about 15 minutes to allow the flavors to meld together beautifully.
