Sesame oil
1 tablespoon
Salt

Pepper

Green onions

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant and golden.
  3. Stir in the chopped bok choy and diced tomatoes, cooking for another 3-4 minutes until the bok choy starts to wilt.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for 15 minutes, allowing the flavors to meld.
  6. After simmering, stir in the soy sauce and sesame oil, adjusting the seasoning with salt and pepper to taste.
  7. Remove the soup from heat and let it cool slightly.
  8. Using an immersion blender, puree the soup until smooth. (If using a regular blender, allow the soup to cool before blending in batches to prevent splattering.)
