Ingredients
- Ripe plantains
- 2 large, peeled and sliced
- Palm oil
- 3 tablespoons
- Ground pepper
- 1 teaspoon (adjust to taste)
- Salt
- 1/2 teaspoon (adjust to taste)
- Roasted peanuts
- 1 cup
Instructions
- Preheat your grill or barbecue to medium-high heat.
- Peel the ripe plantains and cut them into thick slices, about 1-inch thick.
- In a small bowl, mix the palm oil, salt, and ground pepper until well combined.
- Brush the plantain slices generously with the palm oil mixture on both sides.
- Place the plantain slices on the grill and cook for about 5 minutes on each side, or until they are golden brown and have nice grill marks. Keep an eye on them to prevent burning.
- Once grilled, remove the plantain slices from the grill and let them cool for a few minutes.
- In a mortar and pestle or food processor, crush the roasted peanuts until they are finely ground. You can leave some chunky pieces for added texture if desired.
- Serve the grilled plantain slices warm, alongside the crushed roasted peanuts for dipping.
Tips
- For a spicy kick, add a pinch of cayenne pepper to the palm oil mixture.
- If you prefer a sweeter flavor, try drizzling a little honey over the grilled plantains before serving.
- Boli can also be enjoyed with a side of spicy pepper sauce for an extra layer of flavor.
