Ingredients

Ripe plantains
2 large, peeled and sliced
Palm oil
3 tablespoons
Ground pepper
1 teaspoon (adjust to taste)
Salt
1/2 teaspoon (adjust to taste)
Roasted peanuts
1 cup

Instructions

  1. Preheat your grill or barbecue to medium-high heat.
  2. Peel the ripe plantains and cut them into thick slices, about 1-inch thick.
  3. In a small bowl, mix the palm oil, salt, and ground pepper until well combined.
  4. Brush the plantain slices generously with the palm oil mixture on both sides.
  5. Place the plantain slices on the grill and cook for about 5 minutes on each side, or until they are golden brown and have nice grill marks. Keep an eye on them to prevent burning.
  6. Once grilled, remove the plantain slices from the grill and let them cool for a few minutes.
  7. In a mortar and pestle or food processor, crush the roasted peanuts until they are finely ground. You can leave some chunky pieces for added texture if desired.
