- Beef brisket
- 2 pounds
- Chicken
- 1 whole (about 3-4 pounds), or cut into pieces
- Pork sausage
- 1 pound
- Carrots
- 3, peeled and chopped
- Potatoes
- 2, peeled and quartered
- Celery
- 2 stalks, chopped
- Onion
- 1, quartered
- Salt

- Pepper

- Fresh parsley

- Bay leaves

- Garlic cloves
- 4, smashed
Instructions
- In a large pot, combine the beef brisket, chicken, and pork sausage. Cover with enough water to submerge the meats and bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and skim off any foam that rises to the surface. This process helps to ensure a clear, flavorful broth.
- Add the quartered onion, smashed garlic cloves, bay leaves, and season with salt and pepper. Cover and let the mixture simmer for about 2 hours.
- After 2 hours, add the chopped carrots, celery, and quartered potatoes to the pot. Stir gently to incorporate the vegetables.
- Continue to simmer for another hour, or until the vegetables are tender and the meats are cooked through. Taste and adjust seasoning as necessary.
- Once cooked, carefully remove the meats from the pot and allow them to rest for a few minutes before slicing them into serving pieces.
