Ingredients
- Sweet potatoes
- 2 pounds, peeled and cubed
- Water
- 4 cups (for boiling sweet potatoes)
- Granulated sugar
- 1 cup
- Cinnamon
- 1 teaspoon
- Vanilla extract
- 1 tablespoon
- Water
- 1/2 cup (for syrup)
Instructions
- Place the cubed sweet potatoes in a large pot and cover with 4 cups of water. Bring to a boil and cook until the sweet potatoes are tender, about 15-20 minutes.
- Drain the sweet potatoes and transfer them to a mixing bowl. Mash until completely smooth and creamy.
- In a separate saucepan, combine the sugar, 1/2 cup of water, cinnamon, and vanilla extract. Bring to a boil over medium heat, stirring until the sugar has completely dissolved.
- Add the mashed sweet potatoes to the saucepan and stir until the mixture is well combined and smooth.
- Reduce the heat to low and simmer the mixture for 20-25 minutes, stirring occasionally to prevent sticking, until it thickens to a pudding-like consistency.
- Remove from heat and let the boniatillo cool before serving. It can be enjoyed warm or chilled, depending on your preference.
- For garnish, sprinkle a little extra cinnamon on top before serving if desired.
