Ingredients

Sweet potatoes
2 pounds, peeled and cubed
Water
4 cups (for boiling sweet potatoes)
Granulated sugar
1 cup
Cinnamon
1 teaspoon
Vanilla extract
1 tablespoon
Water
1/2 cup (for syrup)

Instructions

  1. Place the cubed sweet potatoes in a large pot and cover with 4 cups of water. Bring to a boil and cook until the sweet potatoes are tender, about 15-20 minutes.
  2. Drain the sweet potatoes and transfer them to a mixing bowl. Mash until completely smooth and creamy.
  3. In a separate saucepan, combine the sugar, 1/2 cup of water, cinnamon, and vanilla extract. Bring to a boil over medium heat, stirring until the sugar has completely dissolved.
  4. Add the mashed sweet potatoes to the saucepan and stir until the mixture is well combined and smooth.
  5. Reduce the heat to low and simmer the mixture for 20-25 minutes, stirring occasionally to prevent sticking, until it thickens to a pudding-like consistency.
  6. Remove from heat and let the boniatillo cool before serving. It can be enjoyed warm or chilled, depending on your preference.
  7. For garnish, sprinkle a little extra cinnamon on top before serving if desired.
